Spicy Red Lentil Soup Recipe

Ingredients
  • 1 onion, chopped
  • 1 teaspoon mustard seeds
  • 200g split red lentils
  • 1 tin tomatoes
  • 1 tsp ginger paste (or fresh ginger)
  • 2 tsp garlic paste (or fresh garlic)
  • 2 small hot chillis, chopped
  • 2 teaspoons dried chilli flakes
  • 1 teaspoon ground turmeric
  • 1 litre veg stock

Directions
  1. Cook the onion slowly in tasty oil (such as groundnut) for a couple fo minites - until soft.
  2. Add the mustard seeds for another minute.
  3. Add the remaining ingredients and bring to the boil.
  4. Simmer for 20 minutes, stirring occassionally.
  5. Blitz a little (I used a hand blender in the saucepan) but retain some texture.
  6. Serve with chopped coriander, sour cream and/or naan bread.
