Spicy Red Lentil Soup

- 1 onion, chopped shopping list
- 1 teaspoon mustard seeds shopping list
- 200g split red lentils shopping list
- 1 tin tomatoes shopping list
- 1 tsp ginger paste (or fresh ginger) shopping list
- 2 tsp garlic paste (or fresh garlic) shopping list
- 2 small hot chillis, chopped shopping list
- 2 teaspoons dried chilli flakes shopping list
- 1 teaspoon ground turmeric shopping list
- 1 litre veg stock shopping list
How to make it
- Cook the onion slowly in tasty oil (such as groundnut) for a couple fo minites - until soft.
- Add the mustard seeds for another minute.
- Add the remaining ingredients and bring to the boil.
- Simmer for 20 minutes, stirring occassionally.
- Blitz a little (I used a hand blender in the saucepan) but retain some texture.
- Serve with chopped coriander, sour cream and/or naan bread.
