How to make it

  • Cook the onion slowly in tasty oil (such as groundnut) for a couple fo minites - until soft.
  • Add the mustard seeds for another minute.
  • Add the remaining ingredients and bring to the boil.
  • Simmer for 20 minutes, stirring occassionally.
  • Blitz a little (I used a hand blender in the saucepan) but retain some texture.
  • Serve with chopped coriander, sour cream and/or naan bread.
