Hot Crab Souffle Sandwich Recipe
This recipe is from one of my favorite cook books. It's called America COOKS - The General Federation of Women's Clubs COOK BOOK. It was published in 1967, I hope you all enjoy it as much as our family has!

Ingredients
  • 8 slices of bread
  • 2 cups of flaked crab meat
  • 1/2 cup mayonnaise
  • 1 medium onion, finely chopped
  • 1 medium green pepper, finely chopped
  • 1 cup finely chopped celery
  • 4 eggs
  • 3 cups of milk
  • 10 1/2 ounces cream of mushroom soup
  • 1/2 cup grated cheddar cheese
  • paprika

Directions
  1. Grease 11 x 7 x 1 1/2-inch baking pan.
  2. Dice 4 slices of the bread
  3. In a mixing bowl combine crab meat, mayo, onion, green pepper, and celery. Spread over bread in pan.
  4. Remove crusts from remaining bread slices. Arrange on top of crab mixture.
  5. Beat eggs and milk until blended. Pour over mixture in pan. Refrierate for 3 hours.
  6. Preheat oven to 325 degrees F.
  7. Bake in preheated oven for 15 minutes. Spoon soup over top, sprinkle with cheese and paprika. Bake in preheated oven for 1 hour longer.
