Caramel-crackle Shortbread Recipe
A bit of a twist to a favorite christmas cookie...you will want to sample these easy to make cookies year round.

Ingredients
  • 1/2cup granulated sugar
  • 2Tbsp water
  • 1cup soft butter
  • 1/2cup sifted icing sugar
  • 1tsp vanilla extract
  • 2cups all-purpose flour
  • 3/4cup milk chocolate chips

Directions
  1. Have ready a foil lined baking sheet.
  2. Stir together granulated sugar and water in a heavy saucepan over medium-high heat. Bring to a boil but do not stir. Boil for 5-6 mins. or until it starts to turn a light brown. Pour onto lined baking sheet and let cool to room temperature. Chop caramel finely
  3. Preheat oven to 350F (180C).
  4. Beat together butter and icing sugar in a large bowl until fluffy, then stir in vanilla. Gradually stir in flour, chocolate chips and caramel pieces. Chill dough slightly if very soft.
  5. Roll out dough between 2 sheets of parchment paper to 1/4inch thick. Cut out with floured fluted cookie cutter. Transfer to parchment lined baking sheets. Bake for 12-14 mins. or until lightly golden around the edges. Let cool on baking sheets for 5 mins. then transfer to racks.
