  • 1/2 lb BONELESS SKINLESS CHICKEN
  • BREASTS, 1" CUBES
  • 1 tb CAVENDERS
  • 1 md CARROTS, THIN SLICED
  • 1/4 c CHOPPED CELERY
  • 1 tb OIL
  • 1 tb CORNSTARCH
  • 1/2 ts FINE CHOP GINGER
  • 3/8 c ORANGE JUICE
  • 1 tb ORANGE CONCENTRATE
  • 1/8 c HONEY
  • 1-1/2 tb SOY SAUCE
  • 1/4 c SALTED CASHEWS
  • HOT COOKED RICE

Directions
  1. SPRINKLE CHICKEN WITH CAVENDERS AND IN A LARGE SKILLET STIR FRY CHICKEN, CARROTS AND CELERY IN OIL 8-10 MINUTES OR UNTIL JUICES RUN CLEAR. REDUCE HEAT. IN A BOWL, COMBINE THE CORNSTARCH, GINGER, OJ, HONEY AND SOY SAUCE UNTIL BLENDED. STIR INTO CHICKEN MIXTURE. BRING TO A BOIL, COOK UNTIL THICKENED 2 MINUTES. STIR IN CASHEWS. SERVE OVER RICE.
