Healthy Mac And Cheese Recipe
This dish puts a healthy spin on yummy cheesy mac and cheese

Ingredients
  • 1/4 cup part skim ricotta cheese
  • 1/4 cup extra sharp chedder cheese
  • 1/4 cup jack cheese
  • 1/4 cup parm cheese
  • 1 lb package whole wheat elbow mac
  • 1 cup 2% milk
  • 1 tbls olive oil
  • 1/4 cup bread crumbs
  • 2 packages frozen summer/butternut squash

Directions
  1. thaw squash in a saucepan until heated through
  2. add all cheeses and milk
  3. stir until melted and combined
  4. add to cooked macaroni
  5. transfer to baking dish
  6. combine bread crumbs and olive oil
  7. sprinkle moisened crumbs on top of macaroni
  8. bake at 350 for 25-30 min
  9. enjoy!!!
