Simple Lentil Barley Soup

- 1 cup lentils (green or french but not red split) shopping list
- 1 cup barley shopping list
- 1 T vegetarian bouillon (I use reduced sodium Better than Bouillon) shopping list
- 1 dash chipotle powder to taste shopping list
- Umeboshi plum vinegar to taste shopping list
How to make it
- Put lentils and barley into a pot and rinse picking out any foreign matter
- Add 6 cups water and bouillon
- Simmer for about an hour till nice and thick and all the lentils are done - this may take less time depending on the size of your lentils
- Add chipotle powder to taste
- Ladle into bowls and have each person add their own Umeboshi plum vinegar to taste
- You can also make this in a crock pot set on low.
