Baked Salmon With Mango Salsa Recipe

Ingredients
  • MANGO SALSA
  • 1-1/2 cups chopped peeled mango (about 1 large)
  • 2 tblspns finely chopped red onion
  • 2 tblspns chopped fresh mint
  • 2 tblspns orange juice
  • BAKED SALMON
  • 1-2 pounds salmon fillet, skinned and cut crosswise into 4 equal pieces
  • 1-1/2 tspns harissa
  • 1/4 tspn salt
  • cooking spray

Directions
  1. MANGO SALSA
  2. Combine all ingredients in a bowl
  3. Cover and chill
  4. BAKED SALMON
  5. Place salmon on a baking sheet, coated with cooking spray
  6. Bake at 450 deg F for 20 minutes or until the fish flakes easily when tested with a fork.
  7. Serve topped with the mango salsa.
