How to make it

  • Take your beets and stab a bunch of holes in them with a fork. Wrap individually in tin foil and roast in the toaster over at 400F for about 40 mins depending on their size
  • Unwrap beets and allow to cool, then peel them and dice them into small 'ruby' sized pieces. Set aside.
  • Start cooking your pasta as per directions
  • Melt butter over med heat in large pan and add olive oil
  • Add garlic & chili flakes and saute until garlic is soft and fragrant
  • Add beets to pan and warm through, turn down heat.
  • Drain your pasta, and add it to the pan.
  • Toss until the spagetti is a bright pink colour
  • Hand squeeze lemon & throw in some parsley, toss to combine.
  • Serve hot!
