Spaghetti Con Rubinis Spagetti With Rubies

- 1 large beet or 3-4 small ones, washed and trimmed but unpeeled shopping list
- 1 package spagetti, fresh or dried shopping list
- 1/2 T chili flakes or more to taste shopping list
- 2 cloves crushed garlic shopping list
- 2 T butter shopping list
- 2 T good olive oil shopping list
- 1/2 lemon shopping list
- fresh flat leaf parsley shopping list
How to make it
- Take your beets and stab a bunch of holes in them with a fork. Wrap individually in tin foil and roast in the toaster over at 400F for about 40 mins depending on their size
- Unwrap beets and allow to cool, then peel them and dice them into small 'ruby' sized pieces. Set aside.
- Start cooking your pasta as per directions
- Melt butter over med heat in large pan and add olive oil
- Add garlic & chili flakes and saute until garlic is soft and fragrant
- Add beets to pan and warm through, turn down heat.
- Drain your pasta, and add it to the pan.
- Toss until the spagetti is a bright pink colour
- Hand squeeze lemon & throw in some parsley, toss to combine.
- Serve hot!
