I picked up a very old italian cookbook and this dish was on the cover. It was so beautiful I opened it up to check out the recipe. This has been modified a little, but the taste is the same. Serve it as a main or a side dish.

Ingredients
  • 1 large beet or 3-4 small ones, washed and trimmed but unpeeled
  • 1 package spagetti, fresh or dried
  • 1/2 T chili flakes or more to taste
  • 2 cloves crushed garlic
  • 2 T butter
  • 2 T good olive oil
  • 1/2 lemon
  • fresh flat leaf parsley

Directions
  1. Take your beets and stab a bunch of holes in them with a fork. Wrap individually in tin foil and roast in the toaster over at 400F for about 40 mins depending on their size
  2. Unwrap beets and allow to cool, then peel them and dice them into small 'ruby' sized pieces. Set aside.
  3. Start cooking your pasta as per directions
  4. Melt butter over med heat in large pan and add olive oil
  5. Add garlic & chili flakes and saute until garlic is soft and fragrant
  6. Add beets to pan and warm through, turn down heat.
  7. Drain your pasta, and add it to the pan.
  8. Toss until the spagetti is a bright pink colour
  9. Hand squeeze lemon & throw in some parsley, toss to combine.
  10. Serve hot!

Sounds very good even if I don't like beets.
