Medieval Salat With Dressing Recipe
A different kind of salad that is at once sweet and biting in the mouth. Goes with any main dish you can imagine.

Ingredients
  • 2 bunches Watercress
  • 2 packages Mustard Cress
  • 1 medium Leek, finely sliced
  • 6 whole spring Onions, chopped small
  • 1 bulb Fennel, julienned
  • 1 handful fresh Italian Parsley leaves
  • 4 sprigs fresh Mint leaves, slightly chopped
  • 6 fresh Sage leaves, slightly chopped
  • 2 branches fresh Thyme leaves
  • Sea salt
  • Black pepper
  • Dressing:
  • 3 tablespoons Wine Vinegar
  • 5 tablespoons Olive Oil

Directions
  1. Wash the cresses well. Wash the herbs and fennel and dry all these thoroughly. I use my lettuce spinner to dry them.
  2. Mix the washed ingredients with the leek and spring onions, in a large bowl.
  3. Sprinkle with salt and pepper, and mix again.
  4. Dressing:
  5. Mix the oil and vinegar and pour over the salad JUST before serving.
