Ingredients

Meatloaf mix

1 1/2 lb. hamburger

3/4 cup finely choppped onion

1/3 cup cracker crumbs

1 egg beaten

3 Tablespoons milk

1 Tablespoon chili powder

3/4 Teaspoon salt

1/4 cup chopped green onion

1 cup of corn (drained)

1/2 cup greenbell pepper chopped

Mashed Potato topping

3 cups mashed potatoes

1 cup of cheese (any flavor)

1/4 cup green onion chopped

Directions

Preheat oven 350 degrees

Mix meatloaf ingredients mix lightly but throughly

Press into a 9" square pan. Bake 20-25 min. Till no longer pink and juices run clear. Pour off drippings..

Mix in a bowl mashed potatoes and onions spread over meatloaf to the edge of pan. Sprinkle with cheese. Broil 3 or 4 " from the broiler, until light brown. I serve with a veg or a salad...a different twist on old meatloaf.
