Malaysian Chicken Curry In Coconut Milk

- 1 chicken, cut into pieces shopping list
- 1 T chili powder shopping list
- 1/4 t cayenne pepper (optional) shopping list
- 2 - 3 T curry powder shopping list
- 1 T paprika shopping list
- 1 t cumin shopping list
- 3 cloves garlic, minced shopping list
- 2 onions, chopped shopping list
- 2 tomatoes, peeled and chopped shopping list
- 1/2 c cilantro chopped shopping list
- 2 T oil shopping list
- 1 bay leaf shopping list
- 1 lb potatoes, peeled and chunked shopping list
- 1 c coconut milk shopping list
- 3 c water shopping list
- salt and pepper to taste shopping list
How to make it
- Heat oil in dutch oven and fry onion and garlic. Add the chicken and continue cooking an additional 3 minutes. Add the spices, stir. Let cook until chicken is tender. Add remaining ingredients. Salt and pepper to taste.
- Serve with plain or coconut rice
