How to make it

  • Saute the chicken breasts, onions, peppers in the olive oil until chicken is almost done
  • Salt, pepper and sprinkle the salad sprinkle over the chicken-both sides
  • Cut the chicken breasts into 3 pieces each
  • Stir around in the pan to let chicken absorb some of the flavor as it continues to cook.
  • Break bacon into small pieces and mix in
  • Thin the Tomato-Basil Alfredo sauce with the milk. and mix with the rice.
  • Pour this mixture over the chicken and stir.
  • Once this is fully cooked, sprinkle the Prmesan cheese over the chicken
  • Spread the spinach over the dish
  • Mix and layer the grated cheeses over the dish
  • Cover and let melt on low heat for about 2-3 minutes
  • Top with the chopped tomato and chopped avocado
  • Drop the sour cream around the dish with one spoonful right in the middle.
  • Serve hot and enjoy
  • If you like it with more of a "kick" just add a bit of grated jalapeno and the spicy jack cheese
  • Serves about 4
