Ingredients
  • 3 large skinned, boned chicken breasts
  • 1 1/2 cups cooked rice (white or brown)
  • 6 slices of cooked bacon (crisp)
  • 1/4 of a chopped onion
  • 1/4 of chopped green or red pepper (may substitue the jalapeno pepper or just add a little jalapeno pepper if you want a spicy flavor)
  • 1/8 cup of olive oil
  • 1/4 cup of chopped spinach- can used fresh or frozen
  • 3/4 cup of Tomoato-Basil Alfredo sauce, any brand
  • 1/3 cup milk
  • 1/4 cup of chopped tomato
  • 1/4 cup of chopped avocado (if desired)
  • 5 tablespoons of sour cream
  • Salt and pepper to taste. Salt may be omitted if on salt resticted diet
  • 1/4 cup of Parmesan grated cheese
  • Grated cheddar cheese and grated jack cheese (may use spicy jack)
  • Salad sprinke (I used santa Paula brand, but if you cannot find a salad sprinkle in the spice are of your store, a little paprika will work)

Directions
  1. Saute the chicken breasts, onions, peppers in the olive oil until chicken is almost done
  2. Salt, pepper and sprinkle the salad sprinkle over the chicken-both sides
  3. Cut the chicken breasts into 3 pieces each
  4. Stir around in the pan to let chicken absorb some of the flavor as it continues to cook.
  5. Break bacon into small pieces and mix in
  6. Thin the Tomato-Basil Alfredo sauce with the milk. and mix with the rice.
  7. Pour this mixture over the chicken and stir.
  8. Once this is fully cooked, sprinkle the Prmesan cheese over the chicken
  9. Spread the spinach over the dish
  10. Mix and layer the grated cheeses over the dish
  11. Cover and let melt on low heat for about 2-3 minutes
  12. Top with the chopped tomato and chopped avocado
  13. Drop the sour cream around the dish with one spoonful right in the middle.
  14. Serve hot and enjoy
  15. If you like it with more of a "kick" just add a bit of grated jalapeno and the spicy jack cheese
  16. Serves about 4
