Navy Beans And Ham Recipe
Everybody has stheir own way of cookin' thir beans in the South. This is "one of the ways" I make mine.

Ingredients
  • 1-lb navy beans that have been soaked in water overnight
  • Andouille - 3 links - sliced in 1/4-inch medallions
  • Salt - start out with about 1/2-tbspn
  • parsley, chopped (about 1/2 palm full)
  • 1-chopped onion
  • 3-pods garlic, pressed

Directions
  1. Put the beans into the crockpot.
  2. Add the andouille, salt and chopped onion.
  3. Cook on low for 8 hours.
  4. Remove lid and, with potato masher, mash up some of the beans to thicken the juices.
  5. Add the garlic and the parsley flakes.
  6. Cover and cook for 1 additional hour
  7. Serve over rice or cornbread
