How to make it

  • Heat oil and saute onions and garlic.
  • Add chicken stock, water and potatoes.
  • Bring to boil and simmer for 10 mins.
  • Add broccoli, thyme and milk and cook for another 5 mins.
  • Salt and pepper to taste. Cool soup.
  • Puree in blender and serve.

    Yummy! Although I did change it a bit. I made it vegan, using soy cream instead of milk and I didn't put onion or garlic, instead I made my own vegetable stock (instead of chicken) that was so full of flavor the soup didn't need onion or garlic.
