How to make it

  • smoke the turkey (outdoors of course) in the hickory wood chips,
  • mesquete wood chips and charcoal (medium)
  • catch the drippins in a pan, save
  • when smoked, prepare in cubes
  • DRESSING:
  • take pan drippins and add to olive oil and sesame oil.
  • mix the oils with the tarragon vinegar
  • Top with pecan and grapes (red seedless)
  • Optional: place ingrediants together on a bed of
  • baby arugula and endive

    Sounds delicious, m'dear. I love smoking meats and to incorporate the drippings into the dressing is genious. Thanks so much for a great recipe - I can't wait to try it.
