Morning Glory Muffins

- 11/4c sugar shopping list
- 21/4cflour shopping list
- 1Tbs. cinnamon shopping list
- 2tsp baking soda shopping list
- 1/2tsp salt shopping list
- 1/2c shreaded coconut shopping list
- 1/2c raisins shopping list
- 2c peeled,grated carrots shopping list
- 1apple,peeled,shreaded shopping list
- 8 oz. crushed pineapple,drained shopping list
- 1/2c pecans ,chopped shopping list
- 3 eggs shopping list
- 1c canola oil shopping list
- 1tsp vanilla shopping list
How to make it
- Preheat oven to 350
- Grease 18 muffin cups
- In a large bowl,sift together sugar,flour,cinnamon,baking soda and salt.
- Add coconut,raisins,carrots apple,pineapple,and nuts.Stir to combine
- In seperate bowl,whisk eggs,oil and vanilla. Pour into dry mixture and blend well.
- Spoon batter,filling to the brim,into 18 muffin cups. Bake 35 mins. Cool in cups 10 mins. Turn onto raack,finish cooling.
- Note: These muffins freeze well!
