Another Lenten delicious dish cooked the way they cook it in the Greek Monasteries. The tastes of the peas, carrots and parsley were wonderfully enhanced by the taste of the oil.

Ingredients
  • ½ kilo of frozen peas
  • ¼ bunch of fresh parsley. Finely chopped
  • 1 onion, finely chopped
  • 3 carrots, diced
  • 3 medium size potatoes
  • 1/3 cup of olive oil
  • salt
  • pepper
  • 1 can of whole tomatoes with juice, blended
  • 2 cups of water
  • (Note: During summer I use fresh peas and fresh ripe tomatoes)

Directions
  1. Sauté onion and then add peas and sauté.
  2. Add carrots and potatoes, salt, pepper, parsley and tomato.
  3. Add water and cover pot with lid and bring to a boil over high heat.
  4. Reduce heat to low and simmer for about one hour.
  5. Serve hot or warm with feta cheese.

Hi, Greekgirl. I mentioned this in my blog that it is just a matter of taste. I am not so fanatic about dill so I use parsley.
