Here's still another way for beet lovers like me to dress up canned beets. From another old cookbook from my collection.

Ingredients
  • 1/2 cup honey
  • 2 Tbsp apple cider vinegar
  • 2 cans sliced beets
  • 2 Tbsp butter
  • 1 medium onion or 1/2 large sweet onion

Directions
  1. Slice onion and separate into rings.
  2. Drain beets and reserve 2 Tbsp of the liquid.
  3. Blend beet liquid, honey and vinegar in a saucepan.
  4. Heat through.
  5. Do not overcook--leave onion rings crispy.
