How to make it

  • Slice onion and separate into rings.
  • Drain beets and reserve 2 Tbsp of the liquid.
  • Blend beet liquid, honey and vinegar in a saucepan.
  • Add beets and onion slices and heat through.
  • Do not overcook--leave onion rings crispy.
