How to make it

  • In a 3 1/2 or 4 quart slow cooker, combine artichoke hearts, onion, garlic and broth.
  • Add chicken and sprinkle with Mediterranean seasoning, salt and pepper.
  • Cover and cook on high for 3 hours.
  • Then place zucchini and tomatoesin cooker. Cover and heat for another 15 minutes or until veggies are cooked.
  • Remove chicken and veggies with a slotted spoon - cover them in foil to keep warm.
  • Stir the coucous and mix into the remaining liquid.
  • Cover and cook 5 minutes or until most of the liquid is absorbed.
  • Serve chicken and veggies over couscous.
  • Top with Parsley
  • Enjoy!! :)
