I was a little iffy on trying this recipe but it actually turned out REALLY good! We all took that first bite and turned to eachother saying "Wow!" This will definitely be on our regular dinner rotation!

Ingredients
  • 1 can artichoke hearts
  • 1 medium onion, chopped
  • 3 tblsp minced garlic
  • 1 can (14 oz) reduced sodium chicken broth
  • 2 lbs chicken thighs (can be boneless/skinless or not)
  • 1 tsp Mediterranean or Greek seasoning
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1 medium zucchini, sliced
  • 1 cup halved grape tomatoes
  • 1 box of toasted pine nut Mediterranean flavored couscous
  • Chopped parseley for garnish

Directions
  1. In a 3 1/2 or 4 quart slow cooker, combine artichoke hearts, onion, garlic and broth.
  2. Add chicken and sprinkle with Mediterranean seasoning, salt and pepper.
  3. Cover and cook on high for 3 hours.
  4. Then place zucchini and tomatoesin cooker. Cover and heat for another 15 minutes or until veggies are cooked.
  5. Remove chicken and veggies with a slotted spoon - cover them in foil to keep warm.
  6. Stir the coucous and mix into the remaining liquid.
  7. Cover and cook 5 minutes or until most of the liquid is absorbed.
  8. Serve chicken and veggies over couscous.
  9. Top with Parsley
  10. Enjoy!! :)
