Tuscan Chicken And Artichokes With Toasted Pine Nut Couscous

- 1 can artichoke hearts shopping list
- 1 medium onion, chopped shopping list
- 3 tblsp minced garlic shopping list
- 1 can (14 oz) reduced sodium chicken broth shopping list
- 2 lbs chicken thighs (can be boneless/skinless or not) shopping list
- 1 tsp Mediterranean or Greek seasoning shopping list
- 1/2 tsp kosher salt shopping list
- 1/4 tsp ground black pepper shopping list
- 1 medium zucchini, sliced shopping list
- 1 cup halved grape tomatoes shopping list
- 1 box of toasted pine nut Mediterranean flavored couscous shopping list
- Chopped parseley for garnish shopping list
How to make it
- In a 3 1/2 or 4 quart slow cooker, combine artichoke hearts, onion, garlic and broth.
- Add chicken and sprinkle with Mediterranean seasoning, salt and pepper.
- Cover and cook on high for 3 hours.
- Then place zucchini and tomatoesin cooker. Cover and heat for another 15 minutes or until veggies are cooked.
- Remove chicken and veggies with a slotted spoon - cover them in foil to keep warm.
- Stir the coucous and mix into the remaining liquid.
- Cover and cook 5 minutes or until most of the liquid is absorbed.
- Serve chicken and veggies over couscous.
- Top with Parsley
