Ingredients
  • 2 pounds - Tilapia Fillets, Rinsed and Patted Dry
  • 20 - Green Olives with Pimientos or Pitted Black Olives, Sliced
  • 4 Cloves - Garlic, Chopped Fine
  • 1 Large Can - Stewed Tomatoes with Juice
  • 2 Tablespoons - Parmesan Cheese, Grated
  • 1-1/2 Tablespoon - Seafood Seasoning
  • Salt - To taste
  • Freshly Ground Black Pepper
  • Fresh Parsley - Chopped (Optional)

Directions
  1. Preheat oven to 375 F.
  2. Arrange the Fillets in a large, glass casserole dish and pour the tomatoes and their juice over Tilapia Fillets.
  3. Sprinkle Fillets with seafood seasoning, salt, and pepper to taste, followed by olives.
  4. Grate the Parmesan cheese over the top.
  5. Bake fish uncovered in the oven until just opaque in center (about 20-25 minutes, for Fillets about 1" thick).
  6. Remove from oven and sprinkle wih fresh parsley if desired.
  7. Serve wih your favorite side dish. (I love it over rice!!!!)
  8. Enjoy!!!!
