This can be used as a spread on sandwhiches, or as a dip with crackers, or as a condiment to go on chichen or fish dishes,

Ingredients
  • 2 large red capsicums
  • 2 small dried chillies
  • i cup wine vinegar
  • 35gm jam setting mix
  • 1/2 cup water
  • 2 cups sugar

Directions
  1. Deseed & chop capsicums (process these in blender)
  2. put in pot & add the chillies & vinegar
  3. boil gently for 3 -> 4 mins
  4. add jam setting mix & boil briskly for 5 mins
  5. add sugar & bring back to the boil for 4 -> 5 mins
  6. test for setting
  7. Discard the chillies and bottle in steralized jars.
  8. Refrigerate once opened if there is any left over.
