How to make it

  • Bring the water, sugar, and butter to a boil.
  • Remove from heat; cool.
  • Stir the flour, soda, cream of tartar, raisins, currants, candied fruit peel, and a pinch of nutmeg and allspice together.
  • Add the almonds and stir well.
  • Into a well made in the center, pour the beaten eggs.
  • Stir well to mix.
  • Pour the batter into a greased and floured 10-inch cake pan.
  • Bake in a 375-degree (F) oven for 1 1/2 hours.
  • Reduce the oven heat to 350-degrees (F) and cook for another 30 minutes.
  • Remove, let sit 10 minutes then turn the cake out onto a rack.
  • After it is cooled, store in an airtight tin.
