Bean-sidhe Cake for Samhain

- 1 cup plus 2 TBS dark brown sugar shopping list
- butter shopping list
- 1 TBS water shopping list
- 1/2 cup ground almonds shopping list
- 3 eggs, beaten shopping list
- 3 1/2 cups flour shopping list
- 2 teaspoons cream of tartar shopping list
- 1 teaspoon baking soda shopping list
- 1 cup golden raisins shopping list
- 1/2 cup candied fruit peel shopping list
- pinch nutmeg, ground shopping list
- pinch allspice, ground shopping list
How to make it
- Bring the water, sugar, and butter to a boil.
- Remove from heat; cool.
- Stir the flour, soda, cream of tartar, raisins, currants, candied fruit peel, and a pinch of nutmeg and allspice together.
- Add the almonds and stir well.
- Into a well made in the center, pour the beaten eggs.
- Stir well to mix.
- Pour the batter into a greased and floured 10-inch cake pan.
- Bake in a 375-degree (F) oven for 1 1/2 hours.
- Reduce the oven heat to 350-degrees (F) and cook for another 30 minutes.
- Remove, let sit 10 minutes then turn the cake out onto a rack.
- After it is cooled, store in an airtight tin.
