Roasted Vegetable Salad

- 1 pound small brussel sprouts shopping list
- 1 pound small yukon gold potatoes shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 1/4 tsp dried rosemary shopping list
- 3 Tbsp olive oil shopping list
- 1 large red bell pepper, cut into bite-size chunks shopping list
- 1/4 cup walnuts,coarsley chpd shopping list
- 2 Tbsp capers shopping list
- DRESSING: shopping list
- 2 Tbsp extra-virgin olive oil shopping list
- 1 1/2 tbsp white wine vinegar shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat oven to 400 degrees.
- For salad, wash, trim, and pat dry brussels sprouts. Make slits in bottoms. Scrub and pat dry potatoes;cut into halves.
- Place Brussel Sprouts and potatoes in shallow roasting pan; sprinkle with salt,pepper and rosemary. Drizzle with olive oil;toss to coat. Roast 20 min. Stir in bell pepper;roast 15 min or until tender. Transfer to large serving bowl; stir in walnuts and capers.
- For dressing; whisk oil,vinegar,salt, and pepper in small bowl until blended. Pour over salad; toss to coat. Serve at room temperature.
