CORN WAFFLES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Scully Estate in Fort Worth, Texas in 1997.

Ingredients
  • 2 eggs
  • 1 cup all-purpose or whole-wheat flour
  • 1 cup cornmeal
  • 1/2 cup butter melted
  • 1 cup milk
  • 8 ounce can cream style corn
  • 1 teaspoon cornmeal
  • 1 tablespoon granulated sugar
  • 4 teaspoons baking powder

Directions
  1. Heat waffle iron.
  2. In medium mixing bowl beat eggs until fluffy.
  3. Add remaining ingredients and beat just until smooth.
  4. Pour batter from cup or pitcher onto center of hot waffle iron.
  5. Bake 5 minutes or until steaming stops then remove waffle carefully.
