Asparagus Frittata

Healthy . just love it . ez to make
Ingredients
- 2 egg whites , beaten shopping list
- 2 eggs , beaten shopping list
- 2 C tender asparagus , trimmed shopping list
- 2 tbsp chives , chopped shopping list
- 1 handful shallots , thinly sliced shopping list
- pinch of salt shopping list
- 2 tsp white pepper shopping list
- 2 tbsp parmesan cheese shopping list
How to make it
- Stir fry asparagus for 2mins in olive oil . Set aside .
- Stir fry shallots until soft .
- Add the asparagus .
- Add the chives , salt and pepper to the eggs and pour over .
- Once start to set , pour the egg whites , sprinkle the cheese and transfer it to the oven .
- Grill it until set .
