Delicious Cheesy Chicken And Spinach Pasta Recipe
This dish is a spin on the old chicken spaghetti my grandmother used to make. I serve it with a side salad and garlic bread. My family is always asking for it. : )

Ingredients
  • 4 boneless skinless chicken breasts
  • 1 box of Penne pasta
  • 1 can chopped spinach, drained (you could also buy frozen chopped spinach)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can rotel (get extra hot if you like it really spicy)
  • 1 large container of velveeta cheese

Directions
  1. Boil the chicken breasts in water until cooked thoroughly, about 20 minutes.
  2. Remove the chicken from the water and set aside to cool.
  3. In a large pot add the soups, rotel, and cubed velveeta. Cook over medium-low heat. Keep stirring so the cheese doesn't scorch. Cook untl cheese melts thoroughly.
  4. Meanwhile boil the penne pasta according to package directions.
  5. Chop the cooled chicken and add it to the cheese sauce.
  6. Then add the spinach to the sauce, I usually only add half of the can.
  7. Finally add the penne pasta to the pot and mix well.
  8. Congratulations, you're done!!
  9. This is even better the next day!
