Scalloped Potatoes For A Crowd Recipe
This is a wonderful recipe to help you know how much to prepare for 100 hungry people. We used to make this for Church Suppers and added cubed ham for a main dish sometimes. A real nice addition to any meal for a crowd.

Ingredients
  • 44 lbs. potatoes
  • 5 tbsp. salt
  • 2½ gal. cream sauce
  • SAUCE:
  • 4½ c. melted butter or oleo
  • 2½ gal. hot milk
  • 6 tbsp. salt
  • 1½ tbsp. pepper

Directions
  1. Peel and slice potatoes (season with salt).
  2. Arrange in layers of cream sauce in greased baking pans (alternating potatoes and sauce).
  3. Bake in slow oven, 325°F, until potatoes are tender (approximately 2 hours).
  4. (Onion, cheese, chives or green pepper can be added to sauce.)
  5. If you wish to make this as a main dish you may add 4-8 cups of cubed ham.
  6. Serves 100
