How to make it

  • In small bowl combine rum and raisins, microwave for about a minute or till raisins begin to plump. Cool.
  • In large saucepan combine the cooked rice and milk and cook over med. heat till mixture begins to boil. Decrease heat to low and simmer until mixture begins to thicken, stirring often, approximately 5 minutes.
  • Increase heat to medium, add the heavy cream, coconut milk, sugar and cardamom and continue to cook until the mixture just begins to thicken approx 5 to 10 minutes. When mixture thickens, remove from heat and stir in drained raisins and toasted coconut. Pour into individual serving dishes and place plastic wrap on surface of the pudding.

    Cool! Love the "drunken" raisins. Picked up one or two of those little Meyer's rum bottles a while ago and never used it and have some leftover coconut milk, so this will be purrfect! Thanks so much for sharing!
