How to make it

  • In a heavy saucepan place yams and cover with water and add the cinnamon
  • Bring to a boil, then reduce to a simmer and cook until soft.
  • Drain the water and add the Maple syrup and butter.
  • Mash with a potato masher or put in a food processor and process.
  • Stir in chopped green chilies
  • Place in an oven proof baking dish and heat, 350 degrees, until hot.
  • Optional:Garnish before serving with chopped parsley of cilantro
