PLANKED LAKE SUPERIOR WHITEFISH This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982.

Ingredients
  • 4 pound whitefish
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/2 teaspoon freshly ground black pepper
  • 4 tablespoons cooking oil
  • 1 tablespoon lemon juice
  • 1/8 teaspoon Tabasco sauce
  • 1 quart mashed potatoes
  • 1 egg
  • 1 lemon sliced
  • Parsley
  • Chives

Directions
  1. Order the fish scaled boned and split down the back.
  2. Wash and dry fish thoroughly then rub with salt, paprika and pepper.
  3. Brush with 2 tablespoons oil then place skin side down on preheated greased wooden oak plank.
  4. Make sauce by combining 2 tablespoons cooking oil, lemon juice and Tabasco.
  5. Bake in 450 oven for 30 minutes basting 3 times with sauce.
  6. Garnish platter with a border of hot mashed potatoes brushed with beaten egg.
  7. Return to oven to brown then serve garnished with lemon slices, parsley and chives.
