Stuffed Green Peppers With Fish Recipe
STUFFED GREEN PEPPERS WITH FISH This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982.

Ingredients
  • 1/2 pound fillet of haddock or halibut finely chopped
  • 1/4 pound fresh shrimp shelled cleaned and finely chopped
  • 3 tablespoons oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 teaspoons cornstarch
  • 1 tablespoon scallions
  • 4 medium green peppers cleaned and scooped out
  • 2 tablespoons oil
  • 1/2 cup chicken broth
  • 1 tablespoon cornstarch
  • 1 teaspoon soy sauce
  • 1/4 cup water
  • Hot boiled rice

Directions
  1. Combine first 7 ingredients then fill peppers with fish mixture.
  2. Place filled green peppers in frying pan containing oil and chicken broth.
  3. Cover pan tightly and cook over low flame for 15 minutes then remove peppers.
  4. Blend together and add remaining ingredients.
  5. Cook for a few more minutes and pour over peppers.
  6. Serve with hot boiled rice.
