Ingredients
  • 1 10 oz package frozen spinach, thawed and drained
  • 1 small onion, chopped
  • 8 eggs, slightly beaten
  • feta cheese, crumbled
  • sour cream

Directions
  1. Mix ingredients in a large bowl.
  2. Heat 2 tablespoons of oil in large non stick skillett over medium heat.
  3. Pour about 1/4 cup of mixture per pancake.
  4. Sprinkle about 1 tablespoon of feta cheese on top of each pancake.
  5. Cook 2 minutes per side of pancake
  6. Top with sour cream if desired when serving.
