Spiced 2-Grain Pancakes

- 1 cup milk shopping list
- 1 large egg shopping list
- 1/2 stick butter, melted and cooled shopping list
- 1 cup old-fashioned oats shopping list
- 1/4 cup plus 1 Tbsp packed brown sugar shopping list
- 3/4 cup all-purpose flour shopping list
- 1/4 cup toasted wheat germ shopping list
- 1 tsp baking soda shopping list
- 1 1/4 tsps ground ginger shopping list
- 1 1/4 tsp ground cinnamon shopping list
- a scant 1/2 tsp ground cloves shopping list
- 1 tsp salt shopping list
- vegetable oil for griddle shopping list
- maple syrup, heated (butter pecan syrup is delicious, too!) shopping list
How to make it
- In a blender, blend all ingredients except oil until just combined.
- Heat a griddle over moderate heat until hot enough to make a drop of water scatter over surface. Brush griddle with oil.
- Working in batches, drop scant 1/4 cup measures of batter onto griddle to form pancakes (4-inch) and cook until bubbles appear on surface and undersides are brown, about 2 minutes.
- Flip pancakes with a metal spatula and cook until undersides are golden brown and pancakes are cooked through, about 2 minutes.
