Ayrshire Shortbread Recipe
This is a plain and simple Scottish Shortbread. Very good with coffee.

Ingredients
  • 1/4 pound butter, softened
  • 2 cups sifted flour
  • 1/2 cup confectioners sugar

Directions
  1. Mix butter with sugar.
  2. Work in flour until well-mixed.
  3. Press in a 9 in pie pan.
  4. Pinch edges to make a fluted rim.
  5. Prick all over with fork and score into 16 wedges with back of knife.
  6. Bake in preheated oven at 325 degrees for 45 to 50 minutes until pale gold in color.
  7. Cut into wedges when cool.
  8. Can be dusted lightly with confectioners sugar when cooled.
