How to make it

  • Mix 3/4 C flour with cheese , herbs , salt and yeast
  • Blend in water .
  • Add the 1 C flour to form soft dough .
  • Dust the work surface .
  • Knead the dough on it for 10 mins until elastic
  • Divide into 2 portions and cover with damp towel and rest for 10 mins
  • Sprinkle two 8 by 6 inch waxed paper sheet with 1 tbsp of semolina on each and pat dough pieces into 5 by 3 inch rectangles.
  • Sprinkle 1 tbsp of semolina on each again .
  • Brush with oil and cover with towel .
  • Let it stand for 30 mins .
  • Cut each into 10 equal strips .
  • Leave it to rise , for 10 mins , uncovered .
  • Pre heat oven to 200 deg .
  • Twist and turn and stretch them to make each of them longer .
  • Place on the cooking sheet and bake for 10 mins .
