Ingredients
  • 1 carrot peeled and sliced
  • 2 onions one sliced one minced
  • 4 pounds chicken quartered
  • 1/2 loaf white bread crust removed
  • 12 ounce can evaporated milk
  • 8 fresh Aji chilies seeded and stemmed then pureed in a blender
  • 4 green jalapeno peppers
  • 4 red jalapeno peppers
  • 2 cloves garlic minced
  • 1/4 cup cooking oil
  • 3 cups chicken broth
  • 1 cup grated parmesan cheese
  • 1/4 cup chopped walnuts
  • 8 potatoes boiled in their jackets peeled and sliced
  • 1 teaspoon freshly ground black pepper

Directions
  1. Bring 1 quart of salted water to a boil in a large pot then add carrot, onion and chicken.
  2. When the chicken is poached after about 45 minutes remove from water then cool and shred.
  3. Strain the broth and reserve carrot and onion and 3 cups broth.
  4. Break bread into pieces and soak in milk.
  5. Sauté onion, chilies and garlic in oil for a few minutes then add reserved carrot and onion.
  6. Add pepper then stir over medium heat for 20 minutes until thick.
  7. Place potatoes on serving plate and pour chicken sauce over them.
