How to make it

  • Bring 1 quart of salted water to a boil in a large pot then add carrot, onion and chicken.
  • When the chicken is poached after about 45 minutes remove from water then cool and shred.
  • Strain the broth and reserve carrot and onion and 3 cups broth.
  • Break bread into pieces and soak in milk.
  • Sauté onion, chilies and garlic in oil for a few minutes then add reserved carrot and onion.
  • Add pepper then stir over medium heat for 20 minutes until thick.
  • Place potatoes on serving plate and pour chicken sauce over them.

    This is aji de gallina!!! Delicious! If you can get peruvian yellow potatoes, it will taste even better!
