Piquant Creamed Chicken Peru

- 1 carrot peeled and sliced shopping list
- 2 onions one sliced one minced shopping list
- 4 pounds chicken quartered shopping list
- 1/2 loaf white bread crust removed shopping list
- 12 ounce can evaporated milk shopping list
- 8 fresh Aji chilies seeded and stemmed then pureed in a blender shopping list
- 4 green jalapeno peppers shopping list
- 4 red jalapeno peppers shopping list
- 2 cloves garlic minced shopping list
- 1/4 cup cooking oil shopping list
- 3 cups chicken broth shopping list
- 1 cup grated parmesan cheese shopping list
- 1/4 cup chopped walnuts shopping list
- 8 potatoes boiled in their jackets peeled and sliced shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Bring 1 quart of salted water to a boil in a large pot then add carrot, onion and chicken.
- When the chicken is poached after about 45 minutes remove from water then cool and shred.
- Strain the broth and reserve carrot and onion and 3 cups broth.
- Break bread into pieces and soak in milk.
- Sauté onion, chilies and garlic in oil for a few minutes then add reserved carrot and onion.
- Add pepper then stir over medium heat for 20 minutes until thick.
- Place potatoes on serving plate and pour chicken sauce over them.
