Chile Pepper Burgers With Lime Mayonnaise Recipe
A fantastic burger. It's great on its own but the lime mayonnaise adds a nice twist. Enjoy.

Ingredients
  • 1/3 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lime juice
  • 1/2 teaspoon grated lime peel
  • 2 pounds lean ground sirloin
  • 1/3 cup sliced green onions
  • 3 tablespoons plain yogurt
  • 2 tablespoons finely chopped jalapeno pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 ounces hot pepper cheese cut into 8 slices
  • 8 Kaiser rolls
  • 2 cups hickory chips

Directions
  1. Place wood chips in large mixing bowl then cover with water and soak for 1 hour.
  2. In small mixing bowl combine mayonnaise, mustard, lime juice and lime peel.
  3. Cover with plastic wrap and chill.
  4. Combine beef, onions, yogurt, jalapenos, salt and pepper the shape into 8 patties.
  5. Drain hickory chips and sprinkle over hot coals then arrange patties on cooking grate.
  6. Grill covered for 15 minutes turning half way through cooking.
  7. Top each burger with 1 slice cheese then grill 2 minutes longer.
  8. Serve on rolls with your favorite condiments.
