Feta Cheese Ravioli With Yellow Pepper Sauce Recipe
An Italian classic pasta with Greek ingredients. A surprising dish with a smooth crust hiding a tasteful surprise of fragrant peppermint and cheeses

Ingredients
  • For the pepper sauce
  • 2 yellow peppers cut in pieces
  • 1 onion chopped
  • 50 ml cream
  • 2 tbs olive oil
  • 1/4 tsp salt
  • For the filling
  • 200 gr feta cheese or other sheep cheese
  • 200 gr katiki cheese or other creamy cheese like ricotta or philadelfia
  • 2 egg yolks
  • 1/2 tsp grated nutmeg
  • 1 bunch peppermint chopped
  • For the ravioli dough
  • 300 gr flour
  • 3 eggs
  • For garnish
  • 1 red bell pepper

Directions
  1. Prepare the ravioli dough mixing the flour and eggs, then form a ball, cover it with plastic wrap and leave in the fridge for 1 hour.
  2. In a double-boiler melt the feta and katiki cheese and add the rest of the ingredients.
  3. Roll out the dough into two sheets of similar size.
  4. Place small balls of the filling onto the one sheet and cover with the other. Cut into traditional ravioli squares using a pastry cutter.
  5. Boil in plenty of salted water for 4 minutes.
  6. Prepare the sauce, sauteing the onion in the olive oil.
  7. Add the pepper pieces, salt and 2 tbs of water and cook until soft.
  8. Puree in the blender, strain and add the cream.
  9. Cook again until our mixture is creamy and smooth and set aside keeping it warm.
  10. Cut the red pepper in thin long strips.
  11. Saute the ravioli and the red pepper for 1-2 minutes in butter.
  12. Serve with some sauce on a plate with the ravioli on top and decorate with some red pepper strips.
