Ingredients

How to make it

  • Salt and pepper the chops and bake at 350 for about an hour, maybe a little less
  • Set aside to cool
  • Put a little olive oil in a skillet over medium hi heat
  • Pour in the entire bag of cole slaw mix
  • Add garlic, cumin and salt
  • Cook until cabbage is just tender, remove from heat and cover
  • Pull apart the pork or chop or slice into small pieces
  • Mix the pork with the BBQ sauce, just to coat it, not saucy
  • Place one heaping tablespoon of slaw mix onto egg roll wrapper, bottom half, 1 inch from each side
  • Top with layer of pork
  • Roll bottom of wrapper over filling, then fold in the sides
  • Bush a little water on the top edge of the wrapper and finish rolling the wrapper
  • Fry till golden brown on each side
  • I use a large cast iron skillet, Fry Daddy would work well too
  • I usually make my own Chipotle Dipping Sauce of sour cream, mayo, honey, salt, adobe sauce and a pureed chipotle pepper but I'm going to try Seafoodlover's Chipotle Ranch Dressing the next time I make them
