Zucchini Side For Two Recipe

This was a quick side that I whipped up last night. I thought it was pretty good.

Recent Gawkers
- Large zucchini
- Half small onion
- Large clove of garlic (or two smaller ones)
- 3 button mushrooms
- Olive oil
- Salt & Pepper
- White wine
Directions
- Coarsely chop onion and mushrooms
- Slice garlic thin and lightly chop
- Slice zucchini diagonally to get ovals
- Heat pan over medium heat and add oil
- Add onion, mushroom, & garlic. Cook for about 1 min
- Add zucchini and cook until zucchini is cooked through but not soggy
- Add salt & pepper and toss
- Add white wine (approximately 2 Tbsp.) and let cook until wine is evaporated or absorbed.
- Serve immediately
