How to make it

  • Mix some salt and pepper with flour.
  • Coat trout with flour mixture.
  • Melt 2 tbsp butter in a large frying pan.
  • When foamy, add the trout to the pan and cook for 5-7 minutes each side depending on the thickness of the fish.
  • Remove when fish is golden brown and firm to touch. Transfer to plate.
  • Add remaining butter to pan and cook almonds and shallot until light brown. Add wine and heat through.
  • Pour over fish and garnish with chopped parsley.
