This is a recipe was adapted from a Normandy recipe. I think it takes pan fried trout to a whole new world!

Ingredients
  • 2 trout, gutted and cleaned
  • 1 small shallot, diced
  • 1/3 c flour
  • 4 tbsp butter
  • 1/4 c of sliced almonds
  • 3 tbsp dry white wine
  • salt and pepper
  • fresh parsley, chopped

Directions
  1. Mix some salt and pepper with flour.
  2. Coat trout with flour mixture.
  3. Melt 2 tbsp butter in a large frying pan.
  4. When foamy, add the trout to the pan and cook for 5-7 minutes each side depending on the thickness of the fish.
  5. Remove when fish is golden brown and firm to touch. Transfer to plate.
  6. Add remaining butter to pan and cook almonds and shallot until light brown. Add wine and heat through.
  7. Pour over fish and garnish with chopped parsley.
