Ingredients
  • 6 skinless, boneless chicken breast halves
  • 1 tsp. finely shredded lime peel
  • 1/2 cup lime juice
  • 3 tbsp. cooking oil
  • 1tsp.dreid thyme or basil, crushed
  • 1/2 tsp. black pepper
  • 1/4 tsp salt
  • 2 cloves garlic, minced
  • bottle of salsa or side (optional)
  • lime wedges for garnish

Directions
  1. Place chicken breast halves in a resealable plastic bag, stir in lime peel, lime juice, oil, thyme, pepper, salt and garlic. Mix well together and marinate in refrigerator for 30-45 mintues. (can be marinated over night)
  2. Preheat broiler. Drain chicken, reserving marinade.
  3. Place chicken on the unheated rack of a broiler pan. Broil 4-5 inches from the heat about 6 mintues or until brown.
  4. Turn chicken and brush lightly with reserved marinade. Broil for another 6-8 mintues or until it done.
  5. Best serve with salsa and lime wedges.
