Pepper-lime Chicken

- 6 skinless, boneless chicken breast halves shopping list
- 1 tsp. finely shredded lime peel shopping list
- 1/2 cup lime juice shopping list
- 3 tbsp. cooking oil shopping list
- 1tsp.dreid thyme or basil, crushed shopping list
- 1/2 tsp. black pepper shopping list
- 1/4 tsp salt shopping list
- 2 cloves garlic, minced shopping list
- bottle of salsa or side (optional) shopping list
- lime wedges for garnish shopping list
How to make it
- Place chicken breast halves in a resealable plastic bag, stir in lime peel, lime juice, oil, thyme, pepper, salt and garlic. Mix well together and marinate in refrigerator for 30-45 mintues. (can be marinated over night)
- Preheat broiler. Drain chicken, reserving marinade.
- Place chicken on the unheated rack of a broiler pan. Broil 4-5 inches from the heat about 6 mintues or until brown.
- Turn chicken and brush lightly with reserved marinade. Broil for another 6-8 mintues or until it done.
- Best serve with salsa and lime wedges.
