How to make it

  • Combine yeast and 1 cup water.
  • Let stand for 15-20 minutes until foamy.
  • Combine flour, salt and sugar.
  • Add yeast mixture, olive oil and enough of the remaining water to get a nice, but sticky, dough
  • Let rise covered in a warm place until doubled.
  • Punch down and let rise again.
  • Punch down and form into small balls.
  • Brush with melted butter.
  • Let rise again
  • Bake at 400 degrees for 12-15 minutes until golden
  • You can chop up cold butter to mix into dough before making small balls if you like.
