Walnut Chicken Recipe
WALNUT CHICKEN This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982.

Ingredients
  • 3 pound spring chicken
  • 2 egg whites
  • 1/2 cup walnut meat skin removed
  • 1 tablespoon white wine
  • 1 cup shredded cabbage
  • 3/4 cup fresh peas
  • 1/2 cup fresh mushrooms, diced
  • 1 sprig scallion

Directions
  1. Cut meat off chicken while raw and dice.
  2. Add to it well beaten egg whites then add the wine.
  3. Leave to marinate while you prepare vegetables.
  4. Into about 5 tablespoons of hot oil put walnuts, peas, cabbage and mushrooms.
  5. Fry until done.
  6. In a separate pan put chicken into about 4 tablespoons of hot oil then put scallion with it.
  7. Fry until done then put vegetables with chicken and fry for just a few minutes until hot.
