Spicy Asian Carrot Ginger Soup Recipe
This is a fast, easy Asian soup that can be eaten as a side or main dish.

Ingredients
  • 1.5 liter water
  • 2 carrots(grated)
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon chopped garlic
  • 1 zucchini (grated)
  • 4 mushrooms (champinion/button) thinly sliced
  • 200ml (1cup) soy sauce
  • Half a chicken stock cube
  • 2 small dried chillies (crushed/chopped)
  • 1 egg (optional)

Directions
  1. Bring the saucepan of water to the boil
  2. Add all ingredients(except egg) and simmer for 5 min
  3. while stirring, dribble in egg.
  4. Serve
