Everyones Favorite Lima Beans

- 2 cups lima beans (if you are near a polish store ask for a bean variety named "Jasio" or "Piekny Jas" shopping list
- 6 cups water shopping list
- 4 T butter shopping list
- 5 cloves garlic (minced or put through a garlic crusher) shopping list
- dash of salt (I use Redmond sea salt - "Real salt" the pouch says, it really does have a different taste) shopping list
How to make it
- Sort beans and cover with water.
- Soak overnight OR bring to a boil, turn heat off, cover and let sit for 1 hour.
- Cook till very tender with the cover off over low heat for as long as it takes.
- Towards the end of cooking, let the water evaporate till there is just 1/2 inch on the bottom
- Add salt, butter and garlic
- Stir and inhale the aroma.
- You can eat this alone or with buttered french bread, but honestly I usually just eat it by itself...it's that good.
