Ingredients
  • 1 CUP LIME JUICE
  • 1 TBSP HONEY
  • 1 JALEPENO PEPPER SEEDED AND CHOPPED
  • 3 TBSP SNIPPED CILENTRO OR MINT
  • 1/4 SALT
  • 6 EARS CORN CLEANED AND HUSKED OR 3 CUPS FROZEN WHOLE KERNAL CORN THAWED
  • 1 1/2 CUPS BABY SPINICH LEAVES
  • 1 LARGE TOMATO SEEDED AND CHOPPED
  • 3/4 CUP CUCUMBER SEEDED AND CHOPPED

Directions
  1. IN LARGE BOWL COMBINE LIME JUICE AND HONEY WISK TOGETHER UNTIL COMBINED.
  2. STIR IN PEPPER CILANTRO AND SALT
  3. ADD CORN TO LIME JUICE MIXTURE.
  4. STIR IN SPINICH TOMATO AND CUCUMBER.
  5. SERVE.
