Lemon-Rosemary Pork Tenderloin Recipe

Ingredients
  • 1 medium onion, diced
  • 2 T extra virgin olive oil
  • 1 T lemon juice
  • 1 t minced fresh or 1/4 t crushed dried rosemary
  • 1 t grated lemon peel
  • 1 t fresh thyme or 1/4 t dried
  • 1 garlic clove, minced
  • 1/2 t each salt and pepper (or to taste)
  • 2 pork tenderloins (about 2 pounds total)

Directions
  1. Preheat oven to 400 degrees
  2. Combine all ingredients except pork in a small bowl.
  3. Mix.
  4. Rub mixture over all sides of the tenderloin.
  5. Place on a rack in a shallow roasting pan.
  6. Bake, uncovered, 25-35 minutes (or til meat thermometer reads 160 degrees.
  7. Cover with foil and let stand before slicing.
  8. Slice in 1/2 inch slices and serve immediately after slicing.
