This carrot cake includes dried fruit bits and raisons in addition to the basic carrots. There is no rum so it escapes classical friutcake but you can add whatever dried fruit you have or buy the Sunkist Mixed Fruits

Ingredients
  • 1 c milk
  • 2 eggs
  • 6 T (1/4 stick) of butter
  • 1 c dark brown sugar
  • 1 1/2 c all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking sode
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp allspice
  • 1 1/4 grated raw carrots
  • 1 coarsely chopped walnuts
  • 1/2 c raisons
  • 1/2 c mixed fruit
  • Cream-Cheese Frosting

Directions
  1. Preheat oven to 350ยบ
  2. Grease and flour an 8-in pan
  3. Combine milk, eggs and butter in a large bowl and beat until well mixed.
  4. Add sugar, beat well.
  5. In a separate bowl, combine flour with all dry ingredients including spices.
  6. Add to first mixture and beat until just blended.
  7. Sir in carrots, raisons, dried fruit and walnuts.
  8. Spread evenly in prepared pan.
  9. Bake in preheated oven in center of oven rack for 45 - 50 minutes or until a knife or skewer in center of cake comes out clean.
  10. Remove from oven and let cool for about 10 minutes then de-pan and let cool completely before icing.
