How to make it

  • melt the sugar over medium heat until it is golden in color, heat the cream on another burner until about 165 degrees and as soon as the sugar is dissolved slowly add the cream in a steady stream, stirring well with a wooden spoon until this is all thick and holds together without any lumps. Let this cool and serve as a filling for candy, or over ice cream or in chocolate cakes, after punching holes in the cake at intervals. IT is equally good right off the spoon
